Out of season **A heart-shaped leaf that pairs wrapped around a white-flowered stem. The taste is wild yet mild and very fresh. Crisp to the palate, Claytonia is a fantastic addition to a salad or as a side garnish to an entree. Claytonia is also very tasty lightly sautéed.
It is often referred to as “ miners lettuce” because, during the gold rush, miners would seek out Claytonia as a source of vitamin C. For many miners this was their only source of nutrition.
A forgotten wild edible.
